We were at Aldi over the weekend and they had all beef hamburger patties all made up and packaged for $1.79 per pound. Great price but it was 80/20 and because of the alpha-gal allergy, I should only be eating 93/7 ground beef but I think the 80/20 makes the better burger. Vince and I stood there and discussed it and I said “I’ll take 2 Benadryl tabs before I eat it!” I did and I had no reaction though I don’t always have a reaction even without the Benadryl. Before I knew what was causing the reaction, I’d eat the greasy burgers at Cotton’s in Lake Charles or White Grill in Nevada, and it was only a few times that I had to go to the ER. Once we knew what was causing it, I have not had a greasy burger and I’ve had no reactions.
Besides the fat in the meat . . we’re on a diet but sometimes you have to do what you have to do, right?
I figured I’d make whole wheat buns. That had to be better than storebought white bread buns.
Then I mixed up the dough, kneaded the dough, let it rise.
Then I weighed out the portions (3.5 oz. each), shaped the buns, let them rise again.
Then I baked the buns.
Ahhh . . then it was time for my yummy grilled hamburger on a homemade bun!
All that work and I allowed myself to have half a hamburger! It was worth it and I would do it all again .. just maybe a month or so from now.

I don’t believe I’ve ever seen a bun pan like that. Is it actually a muffin top pan? Something about the way it looks makes me think it’s from King Arthur Flour. It sure would make forming and baking buns easier.

did your whole recipr make only 6 buns? perfect! i would make bread if i could do it in small batches like that. don’t ever have luck with freezing, being dough or already baked. and not accomplished enough to play with recipes to decrease the size. even with storebought packages i end up throwing away 4 of the 8 buns.
