My electric pressure cookers are still some of my favorite kitchen gadget/appliances. For so long, I had resisted getting them because I have nice stove top models. One I finally bought an electric pressure cooker, I’ve barely touched my stove top models. I’ll always keep them though. If the power is out or if one of the electric models goes out, the standard stove top models will be a great backup.
Last night I made yogurt in the Instant Pot and since it was done by the time I was ready to start lunch, I dumped the yogurt into the strainer, washed out the pot and started over. Carnitas were cooking in the Instant Pot and pinto beans in the Cuisinart.
Instead of wrapping it all up in a tortilla, I served it over avocado slices, Greek yogurt instead of sour cream, no cheese and salsa verde for the “dressing”. A little healthier than normal and delicious and quick with the help of two pressure cookers.

I am planning on adding the Instant Pot to my kitchen once our remodeling is done. Not doing the kitchen right now but since we have an open concept, anything I add is one more thing to remove or protect from the dust. I recently donated my stovetop pressure cooker as I hadn’t used it in over 5 years and it was an aluminum model. I really enjoy seeing all the things you make and can’t wait to try some of the recipes. Speaking of recipes, I was looking for CJs fruitcake and the link to the website doesn’t work so I wondered if you remember how long we’re supposed to soak the fruit. My husband loves that fruitcake and I started thinking I might have to start soon in order to get that soaking done.

My dd has an InstaPot, and I thought would use it more at university. It does take thought ahead of time. I find my good old stove top model to be a huge time savings, too, but also a nicer option when I don’t want to heat up the kitchen. Even a Crock Pot gives off heat over a long day, and the pressure cooker is a snap.
Carnitas, though? Hands down one of my favorite dishes. I have a hankering for it right now, but no pork on hand. Maybe I need to take some of my own advice.

Love my insta Pot!!!! You mentioned it sometime back and then posted when they went on special at Amazon….
Its the only way I cook rice now. And soooooo many other goodies! I took it with me for a week at a friends house and now she has one of her own.
