There are a few things in this salad that could be left out to make it even more healthy but this was pretty darned good for lunch.
It contains:
- Iceberg Lettuce – which I used to love, then didn’t like at all and now love again!
- Cherry Tomatoes
- Cucumber
- Bacon – crispy fried – just a little!
- Figs – from the fig tree
- Bleu Cheese Crumbles
- Purple Onion slices
For dressing, I added just a little balsamic and olive oil.
The best part — I drank water for lunch. I still had a Dr. Pepper for breakfast and may continue to have one per day. If I can cut back to one per day, I’ll be a happy dieter!

Looks yummy to me. Good girl with your water drinking. If you have your kombucha, I think you can give up your DP. I don’t want any soda anymore since I started drinking kombucha. I used to love DP with popcorn or anything salty. Now I’m a kombucha girl because of you!

I have made Dr. Pepper kombucha. I know there is not real evidence that the scoby uses up all the sugar you give it, but I bet it is better than a can of Dr. Pepper. I found syrups that are labeled Dr. Pepper, Root Beer and Orange soda. I use that in the second ferment of the kombucha. It tastes pretty close. There is also Dr. Pepper kombucha in the store, called Live Soda. I have seen it a Krogers.

Yummy looking salad! I have had the same love/hate experience with iceberg lettuce. Though it isn’t very nutritious, nothing else goes as well with Mexican foods…and it’s so crisp and crunchy, satisfying to chew.
To top it all off it is good for “bulk”, if you know what I mean!

I gave up ALL sodas 2 years ago…best decision ever. I drink water with fresh lemon slices, in summer added a small sized ball of watermelon..so refreshing!

Not only is it way more healthy without the sodas but they’re expensive. I could buy yarn with what I’m spending on Dr. Pepper! 🙂
