All I want to do is hang out over at The Mediterranean Dish and read those recipes . . and order weird spices that I may not have . . and cook every recipe on that site. The dishes are so flavorful; such a delightful mix of tastes and textures.
It’s Israeli Couscous with Chopped Vegetables, Chickpeas and Artichokes. I didn’t have any artichokes . . well, actually – I did because I bought some at Walmart the other day but I have no idea where they ended up. I had a jar of artichoke tapenade so I used that and I think it might have been better with that than with chunks of artichoke hearts. I served it with crusty bread and nothing else and it was plenty – filling and tasty!
Except for cooking the coucous, and what I had was quick cooking couscous, there’s nothing to be cooked. I halved the recipe and we still had plenty for more than two meals each . . probably three meals each. It’s light enough that even though we felt full after lunch, we weren’t stuffed or feeling weighted down by our lunch on a hot day. Perfect!
Vince loved it. I was telling him that if I grilled on chicken breast and sliced it, that would go great with this and . . get this! He said “I think it would be good with tofu!” My meat eating husband suggested tofu!
