This seemed so weird but I turned to my friend who knows everything . . Google . . and it wasn’t as weird as I thought.
In all my years of eating spaghetti squash, I have never had this happen.
I cut into it and the seeds inside had sprouted. These squash are supposed to last for months but I suppose that’s if they’re kept in a cool, dark place . . like a root cellar which I need! 🙂 They’re being stored in an extra bedroom, which is air conditioned but our air conditioner is nothing to write home about and I’m counting down the days til it gets replaced in mid-October. Not only am I sweating but now my squash is sprouting!
Can you imagine if I hadn’t looked at it in a while and I went in there and a plant was growing?
What I determined from Google was that it was safe to eat . . and it was, and it tasted fine.
Who can guess what happened to the seeds? I planted a couple of them. I figured if they worked this hard to survive, they should be given a chance. I’m also thinking . . if they grow and I put them in a pot, the vines could take over the greenhouse and that could be a lovely place for snakes to hide and stay warm.
I was surprised to see those sprouted seeds inside that squash!

Judy, you should expect the unexpected! haha! Now, you have a new experiment. Hopefully, you will be able to grow your own spaghetti squash. Wonder if the sprouts themselves are tasty?

Start digging the hole for your root cellar. Vince might have pity on you and take over. Voila – you have your root cellar.

We have cut several tomatoes (purchased at stores) that had sprouted. Never saw this before. Kind of weird.
