While at Chad and Nicole’s, I was trying to come up with a good idea for dinner one day and I knew we had chicken in the freezer so I clicked on the “chicken” tab at Pressure Cooking Today and the first recipe I saw was Chicken Parmesan Meatballs in a Creamy Ranch Sauce. I was kinda torn — meatballs in the pressure cooker sounded kinda “iffy” to me but the picture looked so yummy that I had to try it. We didn’t have ground chicken and their store only had ground turkey so we had turkey meatballs.
They were so delicious!
I forgot to spray the trivet with oil and the meatballs didn’t stick. They browned up nicely in a pan.
There was about 1.25 pounds of meat and I made 15 meatballs. I thought they would have enough for another night but there were only 3 meatballs left.
The next night I fixed pork chops and gravy and I asked Addie if she wanted pork chops and gravy and she said “No, I want gravy on a ball.” I couldn’t figure out what she was talking about and Nicole said “She wants the meatballs from last night!” That’s a pretty good compliment when a 4 year old asks for them!
What do you think was the first meal I fixed for Vince when I got home? Yep . . Parmesan Meatballs, along with roasted Georgia Candy Roaster squash and a salad. I didn’t put extra parsley on ours because I would have to walk out to the garden to get it and it was almost time for Vince to be home for lunch so ours isn’t as pretty as it was at Chad and Nicole’s.
This recipe is excellent and one we’ll definitely make again. The only change I made was when I made it for us, I added chopped jalapeno pepper to the meatballs and roasted Hatch chile peppers to the sauce, to kinda spice it all up a little.
