Really, I’m not paid by Pressure Cooking Today but I love every recipe she posts.
This recipe for Green Chile Pork Carnitas is amazing! More amazing than the original dish is what you can do with the leftovers. I made the recipe exactly by the directions the first time but then we were having company, I made a double batch and had lots of leftovers.
First, I scrambled eggs and added shredded pork carnitas and cooked onions and peppers. That was yummy. But then I fixed the meat with potatoes and it was so delicious. I’ll make this recipe over and over.
First I sliced and lightly browned some potatoes, then added some onions.
Then I added some Hatch chiles. Cooked all that for a few minutes.
Then I added some of the shredded carnitas.
One pot meal . . and it all went into the oven. Just before serving, I added a bit of cheese on top.
Oh, my . . that was so delicious. So very delicious!
