The one fig tree we have is producing like you wouldn’t believe. Every day I put 1 – 2 gallons of figs in the freezer.
Besides munching on figs, I’m making lots of recipes using figs! Figs in salads, figs on pancakes ..
Earlier this week, I made a fig cake . .
And a fig cake . .
I would ask our guests what they wanted for dessert: Fig cake or . . fig cake?
The first one (with the figs on top) has ground almonds. I left them a bit coarser than almond flour. Our friend loved it and said “This tastes like something you would pay $12 per slice at some fancy coffee shop.” Vince, on the other hand, said it tasted like Metamucil. We all cracked up and I said “You really know how to make a girl feel good!”. He tried getting out of that hot water by saying it seemed more “fibery” and more healthy where the other one was more sugary and gooey.
I liked both cakes about equally though they are very different. These are the recipes I used:
Either recipe is great. #1 seems a bit more health; less sweet, and quite pretty. #2 is sugary, gooey and delicious. I recommend them both if you have an abundance of figs.

Vince will have to start making fig wine..my neighbor behind me that has a gigantic fig tree (stands on top of 6 ft ladder and still stretches to reach the top! YIKES) made fig wine a few years back til it was coming out his ears!! No clue what else they did with them.

The closes I’ve ever come to a fig is Fig Newtons and can’t say I was crazy about them. You have your figs and my husband can’t quit planting trees so I will be up to my eyeballs in apples & pears this fall. Already canned a bunch of Pristine apples. They’re kind of sweet, tart, crunchy….good to eat raw or cook with. I’m done with sweet corn, pretty well done with green beans, apricots & strawberries have been done for a while. I’m anxious for ripe tomatoes, but they’re just poking along, in no hurry to get ripe.

Judy, are you sure you can’t just send some of those figs to California. I love figs like no one I know and can’t get fresh ones here without paying an arm and a leg for them. When I was growing up we always had fig preserves.
