It’s that time — Hatch chile peppers are showing up everywhere and everything has Hatch chile peppers in it. United has Hatch chile pepper pound cake, Hatch chile pepper roasted chicken, Hatch chile pepper mac and cheese.
Saturday was the first day United was roasting chile peppers in the parking lot. We bought one 25 pound case.
We almost bought two cases . . I’m glad we didn’t.
I put them in zipper bags . . 4 to 5 ounces in each little bag, and I got right at 70 little bags.
I put 10 little bags into a bigger vacuum seal bag. I used one resealable bag and when it’s empty, I’ll open one of the regular vacuum sealed bags and put them into the resealable bag, which I can reseal every time I open it and get out a bag or two of peppers.
I keep thinking of things I want to make using these roasted chile peppers. First, I’m going to make mac and cheese with chile peppers but I also saved the juice in the bottom of the bag and I’m going to inject a chicken with that and roast it and I can hardly wait!! A few peppers, a little rosemary, a little lemon . . yum!

Better Half and I grew up about 30 miles from Hatch and we are ADDICTS. We are so excited to be going home for a bust next month, just in time for the green chile harvest AND in time to get a couple pounds of roasted pinons… You know we’ll be bringing home a freezer full of chile. YUMMM!
