This morning I was messing with the bread, dealing with the chickens, picking figs, playing in the garden and then I realized . . LUNCH! What am I fixing for lunch? I still haven’t gotten my menu plan together. I didn’t have a clue what I was going to fix and I really only had about 1 hour til Vince got home. I started with what I had accessible/thawed:
- Chicken breasts
- Zucchini
There had to be something I could do to use up chicken and zucchini.
I started by pounding the chicken breasts, seasoning with Slap Ya Mama and browning them. Why is my spice cabinet full and all I really need is Slap Ya Mama?
Took the chicken out and caramelized some onions. Took those out and cooked zucchini with jalapeno peppers.
Then I put the chicken breasts on top of the zucchini.
Put the onions on top of the chicken. At this point, I poured about 1/4 cup white wine, and a little lemon juice over everything.
Put a little feta cheese on top of it all. I had planned to stick it under the broiler for a few minutes but it was already time for Vince to get home so I just put a lid on it and let it simmer for a second.
If I’d had time for another trip to the garden, I would have added parsley and green onions but I didn’t have time. I added a little lemon zest on top and then forgot to take a picture of it plated up but it was delicious.
Anyone with a garden probably has an abundance of zucchini right now so you might want to try something like this!

my zucchini hasn’t produced much yet 🙁 Part of that is being in MI, the other is that something keeps eating the blossoms off the plants!
I do have plenty of crookneck squash coming on right now, though 😉
