Never wanting to waste leftovers, I have to get creative sometimes when we have large items like roast beef . . something I don’t really want to freeze.
Yesterday I shredded the last of the roast beef, poured a little gravy over it and added some sliced small purple onions.
I roasted that til it was nice and warm and then put some grated pepper jack cheese on top and stuck it back in the oven. Vince had his over a slice of bread but I ate mine without bread.
I served it with potato/beet salad. I would liked to have had more beets but I was out pulling beets in the rain and decided I had pulled enough and ran back inside. The roasted beets are sweet and kinda take the place of sweet pickle relish, which has added sugar, and the beets have natural sugar.

that look absolutly delishious. Personally I love to slice roastbeef and make sandwish with dijon mustard…..yummm I have not bought any roastbeef for a long time because the price if beef more than doubled. Make you wonder since here in canada we do produce a lot of beef.
