It isn’t nearly as easy to have a crawfish boil, or even to eat crawfish here, as it was back in Louisiana, but it’s so much easier to do it here than it was in MO or KY. Our local Kroger will order a bag of live crawfish but you have to order it ahead of time . . at least by Monday to get a Friday delivery. While I was in MO, I think Vince was just making sure I was coming home sooner rather than later so he told me that he had a bag of crawfish coming on Friday.
We had friends coming over and I made our traditional Easter Egg pie.
Because the friends had never had crawfish, I figured I’d better make a gumbo just to be safe. Friends never let friends leave hungry!
Vince did an excellent job of boiling the crawfish to perfection. Before we got together, he’d never tasted a crawfish and probably never had any desire to taste a crawfish but he loves them now.
We didn’t manage to ea the entire 35 pounds of crawfish but we came close. We peeled what was leftover and ended up with 2 bags of tails for the freezer so I see a crawfish pie and maybe an etouffee on our menu soon.
Unless we go to Louisiana next month, those are probably my last crawfish of the season. I’m happy that Vince is willing to cook them for me and that he has learned to love them too!

Wonder if you could post your etouffee? Fell in love while in the south for a visit cant find in restaurants this far north.
