Remember when my friend and I planted seeds in the fall and the grasshoppers ate everything but they left one turnip and by the time I got around to pulling it out . . well, Vince had to pull it out.

Yesterday, I was chopping weeds and I saw a beet. One big beet!

There it is next to a more normal size beet. Surprisingly, it was edible! I had to cut away a good bit of the top that was exposed to light and the elements but most of it was good and got roasted for a salad last night.

I have a great recipe for pickled beets if you’d like it!! I love making pickled eggs with them!!! Yum!!
