This recipe for Chocolate Covered Strawberry Cake came through my email from Grit magazine and I knew I had to try it.
Even though I’m not a big fan of chocolate, a little chocolate in the cake, with basically white icing, and strawberries, sounds pretty darned yummy. And it’s made in a 9 x 9 pan so that means it’s a good sized cake for two people or, at least better than if it were made in a 9 x 13 pan.
The batter seemed very dry but I knew the strawberries would add moisture so I didn’t worry about it and the cake turned out just fine. The cake itself isn’t terribly sweet – just has a nice chocolate and strawberry taste. The icing is sweet!
It’s a very good and very easy cake!

Looks yummy! I will have to try it when strawberries are a little less expensive here.
