The United Supermarket here has pretty decent plate lunches and each day there’s a special. Thursday is Chicken and Broccoli Casserole and that’s my favorite. Every Thursday I plan to go there and get lunch or dinner and I almost always talk myself out of the trip to town.
At Aldi the other day I noticed a bag of broccoli and cheese and it didn’t look like the kind that has those hunks of processed cheese spread so I thought I’d give it a try. Tuesday I roasted a chicken for lunch and saved the leftovers for adding to the broccoli and cheese.
The cheese is kind of a coating on the broccoli . . not hunks of cheese or a sauce.
After stirring up the chicken and bag contents, I decided I’d add a can of Cream of Chicken soup, and then I decided I should have used a bigger bowl! 🙂
One day Vince wasn’t coming home for lunch so I had my own chicken and broccoli casserole and though it isn’t 100% like what United has, it is 100% delicious and much less expensive (even though United’s prices are quite reasonable) than buying it out.
A new issue of Modern Farmer had just arrived so even though it was lunch alone, it was a good, leisurely lunch!

Sounds delish! I’ll look for the Broccoli Bake at my Aldi. I have frozen chicken breasts and canned soup on hand. What an easy recipe – 3 ingredients! Thx.
