Call me a bad blogger – no pictures! Nicole told me she had made Tex Mex Chili Mac from the Pressure Cooking Today website. I know I say this every time but either Barbara from that site and I love the exact same things or I’ve only tried the recipes I love because I’ve made dozens and dozens of recipes from there and they have all been delicious.
I had seen the Tex Mex Chili Mac recipe before but putting pasta in the pressure cooker kinda scared me. Nicole said it turned out perfectly so I tried it. Vince was home sick yesterday (and today) and I figured something like this would be hearty and might make him feel better. I used ground venison . . Nicole used ground beef. I followed the recipe exactly except I had a 4 oz. can of HOT green chiles so I just used that instead of the recommended 8 oz.
I would make it again and wouldn’t change a thing!

Oh goody, a new recipe for my Instant Pot! I have everything but the green chilies. Added them to my next shopping list.
