The other day I went to the grocery store and blueberries were on sale so I bought two of the larger containers. I didn’t know Vince was going and he bought one large container too so we had lots of blueberries. I froze some of them but I made blueberry muffins with some.
I used this recipe and recommend it, and will use it again. I love the almond extract – gives the muffins just a bit different flavor from traditional muffins. The raw sugar on top melted just enough to give the muffins a crunchy, sweet glaze on top.
Now that they’re no longer hot, I just pop them in the microwave for a few seconds, add a little butter and . . they’re so good! I’ve been having them for breakfast with just a little bit of cottage cheese on the side.

since i’ve enjoyed just about every recipe i’ve made on your recommendation, i’ve just added another bookmark catagory under ‘recipes’ called judy laquidera recommended.
a quick frozen blueberry question tho. as my blueberries (or huckleberries in my area) thaw, they lose a lot of liquid. do i just strain that away and then use only the berries when making a recipe? i normally use fresh but would like to take advantage of my frozen ones in more recipes.
