Nicole made chicken enchilada soup in the pressure cooker yesterday. She had told me she was making it but it’s the first thing I saw on Facebook this morning. Here’s her picture.
At 6:15 this morning, as soon as I saw her picture, I wanted chicken enchilada soup! The minute Vince left for work, I began digging in the pantry. I found most everything I needed. The recipe calls for two cans of black beans. I had one and I knew there were more cans in the sewing room pantry but I saw a can of pinto beans so I figured one can of black beans and one can of pinto beans and that will work! I had leftover chicken that I didn’t use for the gumbo and broth left over from boiling that chicken.
Since I had extra broth and extra chicken, I figured I’d make a bigger batch so I ended up grabbing another can of black beans from the sewing room pantry. I only had one can of enchilada sauce. I don’t keep a lot of that on hand so I added a packet of taco seasoning mix.
Now . . on a cold, cloudy. blustery January day, we have yummy soup simmering. I think we’ll have soup and baked potatoes for dinner tonight.
It was so nice to be able to make that whole pot of soup with what we had on hand.
