Baked Potatoes are one of my most favorite comfort foods. Once upon a time I lived where there was a restaurant called “The Potato House” and they had baked potatoes and probably 20 or 30 toppings you could get for them – shrimp creole, fried chicken with gravy, chili with cheese and jalapenos. Those are all I can remember. It was a very long time ago.
One chicken breast goes a long way when it’s cut up into cubes and fried so the other day, I used one chicken breast, cut it into chunks, seasoned it, dipped it in egg, and a seasoned flour mix, and fried it.
Onto a baked potato, we added butter, crumbled bacon, sour cream (yogurt really), green onions (from the garden), grated cheese and the fried chicken. We also had a salad but it’s good with soup too.
That is my idea of a perfect meal!

Brings back good memories. When the Colonel and I were newlyweds (38 years ago) and living in TX, there was a baked potato place with many different toppings as you mentioned. Delicious! I love baked potatoes – I make a hamburger stroganoff that I serve over baked potatoes – great comfort food.

I think they offer a baked potato bar at Road to California, but I didn’t go into the food tent. I don’t know why there aren’t more of them…seems like a good idea!
