Even though I love cooking, it’s nice to have good meals that can be ready in minutes, with very little effort.
Last night, after being in the sewing room almost all day, I was glad to pull this meal together in less than half an hour. Vince had been asking for this Pork Schnitzel for a few days so last night, that’s what was for dinner.
The pork schnitzel comes breaded and frozen from Aldi and I brown it in butter/olive oil, then make the gravy. Honestly, I used a package of pork gravy mix that was 49¢ at Aldi . . simple and quick but good. The pork schnitzel isn’t my favorite but anything that cooks up that quickly, I can eat it. Vince loves it. I dumped a few mushrooms in the gravy . . mushrooms I got on sale earlier this year and dehydrated. Added a bit of wine and it was pretty tasty. The noodles and steamed veggies, which were both on sale at Aldi, were quick and effortless.
Definitely not a bad meal considering the amount of time and money that went into it.

We dehydrated some mushrooms, but I find them kind of rubbery when I rehydrate them and and use them. I really don’t care for the texture at all. I don’t mind the texture of canned mushrooms, so I usually keep those on hand in the pantry. Aldi’s has them at a pretty good price so I stock up when we go there. We buy fresh when we plan on using them up quickly. I don’t really care for carrots that have been frozen either, so we don’t eat those, but other vegetables I don’t mind and I much prefer frozen to canned vegetables. Of course, fresh is best, and we do eat mostly fresh vegetables because we can get to the grocery store a produce market a couple of times a week to get them, but if I lived farther away from a store, that would be a different story.
My appetite has declined in the last year, and my tastes have changed. I can hardly tolerate eating meat any more, and things I used to like, like pizza and bacon, I can hardly stand the smell of any more. I think it’s a medication that I’m taking, but I need the medication, so I just have to learn to live with it I guess. Makes getting enough protein in a challenge. We eat a lot more fish than we used to, and I never cooked fish very well, but I’m getting better. Most nights, we end up not eating the same thing.

I love when my husband requests a certain dinner! Even if it is not something I love, I am happy because I know he will like it and also it is a break from me always having to think of what to make.

I live across the river from the biggest mushroom producing area on the eastern seaboard. Hubby and I will stop, usually after touring Longwood Gardens and buy 10 pounds. Then I spend the next day dehydrating them.
