I keep a very close watch on Pressure Cooking Today and it was Saturday when I saw her Chicken Tinga recipe and pictures, I couldn’t stop thinking about it. Yes, some folks spend their time thinking about more meaningful things . . I spend my time thinking about food!
Since I was using my home canned chicken, I didn’t need to use the pressure cooker and since Barbara at Pressure Cooking Today mentioned the book, Burritos, I decided to get the Kindle edition and see what the original recipe was like.
I made the sauce differently and I’ll give the recipe for that below. I also made the Green Rice and I loved it way more than I love the traditional red spanish rice.
Everything was delicious. Vince said “I believe this is the best thing you’ve made lately!” I used 2 chicken breasts (which is what’s in 1 quart jar) and ended up with 7 burritos. We each had 1 tonight (really Vince ate his and part of mine), I put 3 in the freezer and have one in the fridge that we’ll split for lunch one day. They’re big and filling.

Oh, no! another delish chicken recipe to not try. Nancy (my room mate) is in kidney failure and cannot have tomato sauce — too much potassium . Maybe I can modify this and eliminate that…or not. and stick to the recipes that have worked in the past. Keeping her well is number one.

Since I got my Instant Pot, all I can think about is food; what can I cook in it next??? It’s the most awesome thing I’ve ever bought. Now my daughter and my daughters in law want one!!
