You’d think I’m starving because all the blog posts lately have been about food. I think this is the last food post for a while.
Our United store has boneless beef ribs on sale fairly often. Oven roasted BBQ ribs has become my go to dish when I need a meal I can fix and spend no effort. These are especially great for cooking in the solar oven.
Start by seasoning the ribs.
There are several recipes online for these ribs and they call for making your own BBQ sauce but we love this Head Country sauce so I just use that. Pour a little over the ribs.
Cover with foil and bake at 300º for about 3 hours. Remove the foil and continue baking for another 30 minutes (or not . . I sometimes skip this step).
This particular night we had squash (as we have every night these days!), potatoes, bread and coleslaw. It’s easy to stick potatoes in the oven alongside the ribs and have baked potatoes, and open a jar of home canned pinto beans. Dinner with hardly any effort at all!

Hmm – boneless beef ribs – I’ll have to look for those. I like the country style pork ribs since they are so meaty.
But…. why is this post filed under “quilting” and not “cooking”?????
