Does it seem as much to you as it does to me that I’m a continous advertisement for Barbara over at Pressure Cooking Today and Barbara Bakes. As mentioned earlier, she has Pumpkin Steel Cut Oats on the pressure cooker site but the Pecan Pie Granola is on the baking site. The oats recipe was posted Wednesday I think and the pecan pie granola was posted today so I was waiting for it.
Let me tell you . . this stuff is so good! The recipe says “Cool completely and break into pieces.” I didn’t! I took it out of the oven. It smelled so good. I cautiously removed one corner, burning my thumb, blew and blew on it til it cooled and ate it. Now I’m thinking I should make more if we want to have enough for our pumpkin oats in the morning.
All I have to say is . . thank goodness Blue Bell isn’t back in the stores here yet because some of this mixed in with Homemade Vanilla ice cream would be about all I’d need to survive for the rest of my days!

LOL, I looked at that recipe – then I figured out how many sugars in a half-cup serving. It isn’t pretty, so use just a little to top something with no sugar!

That recipe looks ABSOLUTELY fantastic! I can almost smell/taste the granola. It would be a great topping on so many things, including but not limited to pudding, ice cream, oatmeal, fresh fruit as well as a snack by itself. YUM!
