Chicken, Avocado, Lime Soup

Thursday evening someone posted Chicken, Avocado, Lime Soup on Facebook. I had just been to the grocery store and bought what I needed for at least a week.

Avocados were on sale at Kroger and I stood there and debated about getting some and didn’t. They weren’t on my list, I didn’t know what I would use them for, they go bad so quickly .. and did I say . . they weren’t on my list!  🙂  I have the hardest time buying something not on my list so I didn’t get them. 

I told myself I would make this recipe after I go to the store but I wasn’t making a special trip just for avocados. Yep, that’s what I told myself but I couldn’t stop thinking about this soup.  Yesterday evening Vince needed to run to Walmart for Slime. The cactus thorns are wreaking havoc on the RTV tires.

Anyway, I asked him if we could stop at Kroger . . like he would ever mind making another stop! I got what I needed and made the soup.

With the home canned chicken, it was so simple to make.

Instead of dealing with raw chicken and having to cook it, I just opened a jar, drained the broth which I saved for the soup, shredded the chicken, and the soup was made in 15 minutes!

I do think the soup needs a little more spice. Maybe more cumin; not all jalapeno peppers are created equally so either the two I used weren’t very spicy or it needs more. I would also add more garlic. It’s definitely a delicious soup.

In my bowl I added more green onion, more cilantro, taco/nacho blend cheese (which is what we had here) and the avocado. I can see me eating this for lunch and dinner for the next few days . . til it’s gone.

    LOL….I know scary but I could just vision your reaction…you never cease to make my day. Someday I hope to see you living on a big chunk of land near the kids with the same thing you have there except with green grass, good wifi and rivers, and no spiders, snakes and critters. No matter were you are you make it home and will be content, so maybe when Vince retires. Addy would love it. Thanks for all the good recipies too…I’m thinking of trying canning chicken because I lack freezer space but will a water bath canner work or just a pressure cooker type. Thanks again for making me laugh again today.

    That’s the shredded cheese I keep on hand all the time. I like the blend in everything. This soup sounds delicious. I have canned chicken myself, an avocado on the window sill, and plenty of veggies. I may give this a try tomorrow!

    That sounds YUMMY!! I love the avocado soup at Cristina’s Mexican restaurant!! SO yummy but no chicken..it’s the broth, cheese and avocados and sometimes has carrots. That and the chips and salsa is dinner enough for me!!

    Don had the front tires of his tractor filled with foam because with all the big ruts left by the loggers the tires would come off the rims. They can’t go flat because the foam prevents that. It wasn’t cheap though….about $400 for 2 tires but if it saves us from buying new tires several times a year, it will be worth it. Maybe that would work for your ATV tires.
