I am so thankful that I love to cook, especially since we always seem to live where the restaurant choices are quite limited. I’m also thankful that Vince will eat pretty much anything I fix and never complain.
The plan was to have pizza for dinner this evening but the plan did not include me taking a nap and sleeping til 1:30 p.m. When I woke up, I thought . . pizza . . darn! But, I was able to make the crust and get the pizza on the table by 3:30. Two pizzas, in fact, and crust in the freezer for two more. Not bad!
Pizza #1 has homemade sauce from our tomatoes, caramelized red onions from the garden, turkey pepperoni, homemade Canadian bacon, black olives and of course, mozzarella cheese.
Pizza #2, which is my favorite, has no red sauce. I caramelized the onions and garlic in butter and spread that on the crust. Next was some thick chunks of fresh mozzarella. Then I added some tomatoes from the garden that I had chopped and drained, and finally, some fresh basil, with a little black pepper and fennel seeds. Yum!
There are leftovers enough for a couple of lunches next week . . if I can keep it hidden from Vince. He loves leftover pizza!

Vince must be a Northeast boy. My dh loves leftover pizza.
And NY crumbcake and leftover corn fritters, in that order.

I love leftover puzza, but I rarely get an. We (Hubby and I) have NO will power when it comes to homemade pizza. It would all be gone before we went to bed. 🙂

YUM!! I love to use caramelized onions as a “sauce”. I found that idea when I purchased an Amy’s brand frozen pizza. It’s delicious with spinach and capers, too.
I often make a sun dried tomato pesto to use as a sauce. I freeze it when it’s in season to use the rest of the year. If you would like my recipe, just let me know.
I actually have plans tomorrow to make a pizza with spinach basil pesto, leftover cooked turkey, artichoke hearts, pickled red onions, and some Italian blend cheese.
BTW, arugula grows so well here, that it’s almost impossible to kill. And arugula pesto rivals basil pesto admirably. It has a similar peppery flavor. Thought you might want to know, in case you’d like to try it out there. Our climates are pretty different, for all that we both live in TX.

And by “dinner” you mean lunch. In NY a meal at 3:30 is lunch. Dinner is at 8. ( or 6 if you have little kids)
