We’re slowly getting back on the Weight Watchers plan. Over the long weekend, we didn’t follow the plan but we still ate sensibly and neither of us gained but we didn’t lose anything either.
Last night Vince grilled tuna and corn and my contribution was fried eggplant. Vince makes the best grilled corn and the corn in the grocery store right now is so good. I’d like to have it every night during corn season but . . we won’t . . probably! 🙂
For the sauce to go with the tuna, I combine mayonnaise, Sriracha, grated ginger, soy sauce and a little honey. Yum! I could also eat grilled tuna every day but Vince doesn’t love it as much as I do so we have it a couple of times a month. I love that I can cook an extra tuna steak and put it on top of salads for our lunch the next day and use the leftover “sauce” for a salad dressing. Easy and delicious!

Your dinner looks delicious! I know from experience that weight watchers is an excellent program not just a diet but could be followed for life! I need to get back on wt watchers & stay on wt watchers but my downfall seems to be I don’t pIan ahead for it. I don’t have a garden & don’t like to shop for groceries more than once a wk. I admire your wkly menu planning & extended wonderfully filled pantry. I’m curious tho, if everything you can or have canned such as meals fits in with the program or somehow works w/ weight watchers or perhaps those meals are from wt watchers recipes? Thank you for inspiring me to eat better & healthy! Penny in S CA

You are so creative in your cooking and sounds like Vince is good about eating just about anything so that definitely helps! I mostly do not like my own cooking though I’ve been told it’s pretty good. My DH would also eat pretty much anything. I like tuna in a can sometimes but not grilled fish of any kind but fried tomatoes–OOOO, YUMMY!
