Dinner was some kind of Roasted Pork Tenderloin, Potatoes, Tomatoes/Cucumbers in balsamic and olive oil, and Ginger Mint Pineapple Salad.
All of the recipes (except for the tomatoes/cucumbers) were Weight Watchers recipes.
The pineapple was purchased at Walmart over the weekend and it looked less than promising. It was hard and not ripe and I never have much luck getting those to the exact right spot. Either I cut into them when they’re not ripe enough or I wait til they’ve totally fermented. But, when I cut into that one yesterday . . my first thought was to eat the whole thing before Vince got home. It was so good and with that mint/ginger dressing . . I had to exercise more self-control that I was sure I could muster.
Vince isn’t coming home for lunch today and he asked what I was going to eat for lunch and I said “pineapple”! I’ll have something else but the pineapple is what I can’t wait to have!

To get a ripe pineapple pull out on of the leaves. if easy ripe. I still let mine sit for awhile but generally this works.Also look at bottom and make sure there is some yellow starting. Kind of like watermelon has to have yellow on bottom are isn’t ripe at all. I eat my cottage cheese with pineapple myself.Some times with cucumber with french dressing for a change. Both good stuff and protein to boot.Sorry about your garden too. You and Vincent work so hard on it each time.
