We had a change of plans. I kept thinking about a Weight Watchers Fish Taco recipe I had seen so I fixed that instead.
There’s a piece of fish under the coleslaw and chipotle aioli. In the bowl is spinach with cheesy toasted bread crumbs. Maybe it’s because we’re getting less food and we appreciate it more but this was so darned delicious. I could have eaten twice as much . . but I didn’t. Vince got two tacos and I got one but he gets almost twice as many points as I do.
Tomorrow for lunch, we’ll have fish tacos again because the recipe made four servings. For dinner, we’ll have what we were supposed to have tonight — Greek Chicken, but I think I’m going to do something different for the side and not have the Greek salad but save that for lunch on Thursday. Who knows . . I have a lot of time to change my mind between now and tomorrow! 🙂

If you use a smaller plate you will think you are eating a full plate. I read to put your fork down between bites so that you eat slower. It is not fair men get twice as many points and lose more weight. Good luck to both of you.

I love reading your blog! You inspire me. I read many of your posts to my husband and he enjoys them too. We are about the same age and many of the stages of your life and mine coincide. We built a new home a couple of years ago on some land that we have owned for quite awhile. It is on a little knoll with no trees around but a couple of very old walnut trees. We had lived in our previous home for 35 years. Everything was well established and I loved working outside. Here I am so overwhelmed at just trying to get things going. I didn’t even want to plant trees because I didn’t think they would produce but by reading your blog, I have hope lol. What are the size of the trees you purchase and are they dwarf? I tried to search your blog to find out but couldn’t find anything about it. I have seen the pics but still wanted to ask. Thanks so much.

I forgot to tell you I’m your neighbor from the north. I love in northern Oklahoma and the wind comes sweeping down the plains and just about blows us off our little knoll.

I decided to fix a beef roast in the pressure cooker tonight. Figured with that, the left over potatoes and gravy if we lose power we have dinner again! Nice having a gas range again.

I’ve been on Weight Watchers for almost 2 years, and I’ve been at goal weight since September! I like that if I really want something, I can find a way to fit it in. (Ice cream and chocolate are very important to me…) 🙂 It is easier once you get to goal and can have more points, though. I actually prefer diet soda now, so I can get my Mt. Dew fix without guilt, but it took a long time before I got used to the taste. I do find myself checking points and deciding if it is worth the points or not. I have a couple of Weight Watcher’s cookbooks, but I haven’t really tried too many of the recipes. I need to make more of an effort in that area.
