First off, I do not like dark meat. I do not like chicken thighs. I only like breasts and wings. But, I figured . . what the heck, it’s served over rice and I’m perfectly happy to have rice and nothing else, so I made everything according to the recipe. The original recipe is Slow Cooker Honey Sesame Chicken from Tasty Kitchen. Instead of using the slow cooker, I used the pressure cooker and added just a tad of sweet to the dish, in the form of brown sugar. Also, I found the 3/4 tsp. of red pepper flakes made it just a bit spicy for my preference so I cut back to 1/2 tsp. The recipe just said “soy sauce” but you definitely need to use low sodium soy sauce. It was way too salty with plain soy sauce. I only used plain because I didn’t have enough low sodium and I don’t even buy plain any more but I tasted it before cooking the rice so I used less salt in the rice and it was ok.
It was truly one of the better meals I’ve made lately.

I made this last night and it was GONE ! Usually we have leftovers … not last night…. in fact my middle 2 daughters were the last to come home to eat, and after I made them each a bowl of rice and chicken, there was maybe one serving left. They both wanted seconds ! I only made one change – because I didn’t have sesame oil … I used a little canola oil and a little tahini – it really was amazing. We’ll be having this one again often – thanks Judy !
