This is the time of year when we’re exhausted by dinner time and when we’re too tired to eat . . that’s tired! Saturday we had worked around here all day and by the time we were in the house, neither of us wanted much to eat so I fixed a big salad, with everything except tomatoes from the garden.
Since the spinach is all gone, we started with lettuce. There are several kinds of lettuce ready for picking.
Next I added radishes.
The radishes are Long Scarlet Radishes. I’m trying to grow different types of radishes to see which ones we like best. Some are overpoweringly strong, which I like for some things, but I also want a salad radish with just enough bite that we get the flavor but isn’t so strong that all we end up tasting is radish. We like the Long Scarlets.
Next I added a bit of a tender young purple onion, thinly sliced.
The next addition was strawberries! Some of the strawberries are fairly small and they’re great for tossing into a salad whole.
Those strawberries are so sweet . . it’s hard to stop eating them.
Next came some golden sugar snap peas that are immature and tender enough to eat the whole thing.
Last addition from the garden — basil and mint leaves, thinly sliced.
The final ingredient was storebought tomatoes. It won’t be long til we have our own tomatoes! Dressing was blueberry balsamic vinegar and a bit of olive oil.
I think tonight we’ll have the same thing but maybe grill a chicken breast, slice it up and add it on top.
You’d think with all the work we do and if we at like this every night, we might lose weight but so far . . not happening.
