The storebought biscuit mixes seem to have gotten outrageously expensive . . or I’m turning into a serious tightwad! Every year about this time, I make up a batch or two of homemade biscuit mix. Then when it runs out, I buy one box of the storebought stuff, and then I remember that homemade is just as good and way less expensive.
The recipe I use is basically this one from King Arthur.
Since I do mine just a little differently, I’ll post the recipe here. I use less salt and I add buttermilk powder. One batch makes enough to fill one gallon sized jar and one quart jar. I almost always make a double batch. It will keep at room temp for several months but I keep the extra jars in the fridge.
Why do I always remember to make the homemade stuff this time of year? Strawberries! Strawberry shortcake made from this mix is delicious and quick and easy!

The addition of buttermilk is an excellent idea. This is a good useful mix and would make a great new home gift.
Strawberry shortcake and fresh peach shortcakes! Oh my! I use my homemade mix to make cobblers too, wild blackerry being the best loved.

Thanks, Patti. I’ll try that one next time. Do you measure out your 20 cups of flour or do you just dump in a whole bag of flour? In fact, I might go ahead and make it and then I’ll be able to do a taste test with both batches.
