Vince went by the grocery store for me today and even though he has my grocery list, I never know quite what he will bring home. For sure, if there’s anything on sale, it’s going into his basket. Today, it was a package of ground lamb.
That wasn’t on my menu but I got online and found Moroccan-Style Lamb and Chickpeas and I had everything I needed, more or less.
The changes I made:
- The dish seemed like it needed a little extra tartness so I also added the juice of one lime.
- The sauce was not thickening (not sure why they thought it would) so I mixed a little cornstarch with water and stirred that in to thicken the sauce.
- I do not like raisins at all so I chopped some dried apricots and added those instead of the raisins.
Then, for the Couscous-Arugula Salad, I substituted spinach for arugula since I seem to be using spinach three meals a day these days! 🙂
It was seriously delicious . . if I do say so myself!

Judy, with your HUGE tomato harvest I am surprised that you buy tomato paste. It is really easy to make in the oven.

It isn’t a matter of it being easy to make . . I don’t use much tomato paste and one of those tubes goes bad before I use it so I don’t “waste” my tomatoes on paste. I make and use a lot of sauces but am not a big fan of tomato paste.
One or two tablespoons is all I ever use, and probably don’t even do that once a month, and that’s just not enough to justify canning it in even the smallest of jars.

I like to get my ingredients together before cooking, too, but your display looks professional! Like a cooking show.
It’s funny about the raisins. I just made Moroccan vegetables, which called for raisins. The author said that if we didn’t have raisins, we could substitute olives! How’s that for a different flavor!?
