Yesterday was one of those days when I was so thankful to be a canner! I took a long nap in the afternoon and as I went to bed, I wondered what on earth I would fix for dinner. In our opinion, our town is woefully short on good restaurants .. on a good day but when I feel bad, there’s nothing here I can think about that I want as far as eating out. I didn’t feel like going out but I knew Vince would pick up anything I wanted but .. there was nothing I wanted.
When I woke up after several hours of sleeping, I put 4 cups of rice in the rice cooker, got that going and went to the pantry and found plenty of “just what the doctor ordered” type food – good homestyle cooking in jars that I had canned.
I retrieved venison with onion gravy, candied yams and spiced apple rings. We love those and I have to ration them or we’d eat them all within the first week of canning them. There was broccoli in the fridge so I steamed that.
Since I made plenty of rice, tonight we’ll have leftover rice with a jar of “unstuffed cabbage rolls, along with home canned corn and I’ll make a pot of cornbread.
There should still be leftover rice. I signed up for a wonton or Chinese dumpling (can’t remember the name of it) Craftsy class so as soon as I feel like going to the grocery store, I’m going to make wontons and fried rice for dinner . . maybe Friday night.
The baked beans . . one night this weekend I’ll get Vince to grill pork burgers again and we’ll have baked beans with that and by that time, I should be 100% recovered.
