Dinner – Weird Combination

My very favorite BBQ place is in Casville, MO – the BBQ Station. I love that place and always want to go there at least once when I’m visiting Chad. The thing I like the best there is a bowl with 2 meats, baked potato salad, beans, coleslaw, sour cream and maybe cheese – I can’t remember. There’s enough that I always have some to bring home for my next meal too.

All day I was busy and dinner time arrived before I was ready. Vince was late getting home and I wasn’t paying attention to the clock and by the time he got home and we chatted about the events of the day, I was thinking .. what on earth are we having for dinner? 

Here’s what I put together and it was so good . . almost as good as what I get at the BBQ Station in Cassville.

There are two tamales on the bottom (from the freezer), then pinto beans that I had cooked yesterday in the pressure cooker,  chili from a jar that I had made and canned, coleslaw that I had made the night before, and avocado. Somewhere, there’s a bit of sour cream but I couldn’t figure out when to add the cheese so I left it out. Vince said “I wish we had some Fritos!” We didn’t but I had corn tortillas so I cut those up and fried them crispy and . . we had fried corn chips.

Talk about good . . I think I might see if I can get away with fixing this again tomorrow night!  🙂

    Your lunch looks good, but I’m surprised that you didn’t mention Underwood’s. It was a treat to eat there 50 years ago when we lived in San Angelo, and my aunt and uncle still like to go there for special occasions. Last time I went the line was out the door.

      It isn’t our favorite place. I think we’ve been there twice.
