Canning is about so much more than just putting up veggies that are in season. I’ve been wanting pulled pork sandwiches and instead of getting a pork butt out of the freezer, defrosting it, putting the rub on, leaving it in the fridge for a day or so, smoking it . . I grabbed a jar of pulled pork and a jar of pinto beans and we had dinner ready in a flash.
For some reason, I do not like leftover pulled pork and I don’t like it frozen but I love it canned. The last time I made pinto beans, I cooked 4 pounds of dried beans, put them up into pints and now . . it’s just heat and eat and we have what tastes like fresh cooked pinto beans.
I mentioned yesterday (or day before) that we love slaw on sandwiches. I added leftover coleslaw to the pork sandwiches.
We had beans, pork sandwiches with coleslaw and pickles. All homemade except the rolls. It was good and it took less than 10 minutes from start to finish. Actually, I heated both jars in the microwave so the only dirty dishes from “cooking” dinner were 2 pint jars.
It was a very good meal and very quick. The rest of my evening will be spent knitting!
