Yesterday I never got around to sharing what I had cooked in the pressure cooker and I knew you were all dying to know! 🙂 Not really . . I get annoyed sometimes with people who post everything they cook and then I do the same thing.
Last night, I fixed Sweet & Sour Country Style Ribs and they were so delicious!
We had leftover rice and leftover black beans so I combined them, added a little cilantro, cumin and chicken broth, heated it all up and that was our side, along with cole slaw.
Tonight, I heated the leftover ribs and made mac & cheese.
It was so yummy! The macaroni was cooked perfectly, just a bit al dente once the pressure was off but by the time the milk heated up and the cheese melted, it was just right. Before seeing this recipe, I would have figured macaroni would have come out of there as one big glob of mush but not so! It cooked for 5 minutes under pressure so all total, it probably took 10 minutes to make it with no heat in the kitchen, the oven oven was not used and I have one non-stick container to clean!
I don’t think I have to tell you how much we love our Cuisinart pressure cooker! Vince said today . . tell me again why you never got this before now!

Your meals look delicious. If you can use the electric pressure cooker for canning like an older one that sits on the stove, I’m all for getting one too.

There’s a good bit of difference in a pressure cooker and a pressure canner. I would not recommend trying to can in a pressure cooker, especially not an electric cooker.
