The tamale making process has been put off long enough. The meat was cooked and shredded but today was the first day all week that I knew I would be home long enough to get it all done.
The meat mixture, masa mixture, corn husks and steamer basket . . all ready to go. This amount of meat and masa will make between 6 and 7 dozen tamales but I can only put about 5 dozen in my steamer basket.
It’s a slow process but I am so thankful for the smooth counter top. Like so many things in life, I don’t think I would appreciate it nearly so much had I not lived with that awful, uneven tile top for a couple of years. This is the first time I’ve made tamales since getting the new counter top in January. While it isn’t as messy as some things I do in the kitchen, I’m so glad to not have to be digging dried masa mixture out of the tile grout.
The basket is stuffed and ready to be steamed.
They’ll steam, covered, for about an hour. I’d like to take a nap but I have more tamales to make . .

You are GOOD, Judy. I don’t like tamales but even if I did, I’d still just go buy them from some of the people around here who make them and sell them. I’ve never been into ‘heavy duty’ cooking. HA

I try to never buy anything if I can make it myself because what I make is almost always better than what I buy.

I was just wondering if my blanching pot would work for steaming tamales? I has a lift out liner with holes.

Your tamales look incredible. My father always talked about the tamales his very German grandmother used to make. I’m not sure where she learned to make them, but apparently they were very good. I just wish I could have tasted them!

WE have never attempted them: but the tamale lady we have in the area does a tremendous job at making them. We usually get about 6 dozen, freeze em and then we have them when we want tamales, eggs & green chili or a mexican meal with them. She makes them both mild and hot- when she does that we get about 12 dozen of them. They are so delicious !
