For years and years, one of my favorite desserts to get at the Picadilly Cafeteria in Lake Charles was Cracker Pie. They called it something else and I don’t know how I ever connected the pie to this recipe, but probably 20 years ago, I ended up with the recipe and this has been one of my favorite pies, though it’s really more like a meringue.
Yesterday I pulled out a bag of pecans that needed to be cracked and peeled and started working on getting that done. As is always the story when I’m shelling pecans, I eat more than I save and when I tasted that first pecan, I said to myself . . I want to make a cracker pie! I only had saltines (no Ritz) but I’ve made it many times using saltines so . . a cracker pie was made.
It isn’t real pretty but it is real easy. I think I’ll go have a slice of it now!

I grew up eating Cracker Pie with Saltines, loved it. Then I moved north and people had never heard of it and laughed at me! Slowly, I stopped making it, but now I ‘m going to start again, but tell no one what’s in it. Yummy!

Who wouldn’t love cracker pie? It’s not like it has anchovies or anything like that! 🙂

A friend was looking for a pie recipe last week that was diffident to make for her sister’s birthday. I made this pie and took to one of our quilt group and she loved it, said if she had seen the recipe beforehand she would not make it. I use to make it for my brother it was he’s favorite. One thing you can’t make it if the humidity is high I found out.
JudyL says
I’m not sure about that because I learned to make it while living in southwest Louisiana and humidity is about 150% 100% of the time . . or so it seems!

Thanks for a stroll down memory lane. I grew up in Memphis, eating Cracker pie at The Picadilly! Loved it.

Are the Picadilly Cafeterias still open anywhere? I always loved eating there. Remember the “Dilly Plate”? I think it was one meat, 2 veggies and bread for something like $2.99 back then.

Pecan Delight is what my Piccadilly here in Baton Rouge calls your cracker pie. One of our Piccadilly cafeterias is closing this week,,leaving us with two.

NW PA, back in early 50’s, we called it Mock Apple Pie. Got lots of zucchini, try Zuzzhini Mock Apple Pie, it’s on internet. Good for you and yummy!
Rebecca in SoCal says
I thought this was going to be the “mock apple pic” from Ritz boxes, but this sounds better!
