Everyone knows how to make a layered salad, right? On a hot summer day, there’s nothing better than an ice cold salad with dinner and this is one of my favorites.
Just use whatever you have handy. Since I have lettuce, carrots and peas in the garden, and plenty of eggs, I almost always have the ingredients needed for this salad and it won’t be long til I have home grown tomatoes!
Start with the veggies .. lettuce, tomatoes and carrots.
Add some cooked bacon.
Add sliced boiled egg and grated cheese.
Top it all with green peas. Add a little salt and pepper! And for the dressing, I use equal amounts of sour cream and mayo, along with a little sugar. Start with 1 teaspoon and if you want more, add it but it gets too sweet really quickly.
My secret ingredient, which isn’t much of a secret if I’m telling you, huh? . .
Jalapeno powder. When I first made the jalapeno powder from the excess jalapenos, I wondered if I would use it but I’ve been doing it now for several years and every year I seem to use more than I did the previous year. Love that stuff.
Mix all the dressing ingredients, spread over the top of the salad, cover with plastic wrap, stick in the fridge and try to stay out of it til dinner time!

I just made a layered salad a couple of weeks ago but with no jalapeño powder. And I didn’t have carrots so I added chopped cucumber. So easy and so good. The peas and the bacon are my favorite layers.
