Before we began our healthier lifestyle on January 1, there was never a time when we didn’t have homemade bread in the house. On January 1, that all ended and I have not made bread, nor have I tasted homemade bread, in 4-1/2 months. For over two years, my countertops were those horrible little 4″ tiles and it was so hard to knead bread. One of my main reasons for wanting solid countertop was to knead bread and I have not made bread once since getting the new countertops, but that changed yesterday! I made these rolls and they were worth a bit of indulgence.
Before I tell you about the rolls, I have to tell you a funny story. Last week sometime, my friend, CJ, posted a video about a guy making bread using a mixer she was wanting to buy. Apparently I minimized the video on my laptop but when I set my knitting on the computer for the night, somehow, at some point, it must have got the video going again. I don’t hear much of any thing during the night but the computer screen can be seen from Vince’s side of the bed.
The next morning, I was barely waking up . . not quite firing on all cylinders, and we had this conversation. I had totally forgotten about the video.
Vince: Did you hear all the commotion last night?
Me: No! What happened.
Vince: Some guy making bread.
Me: Really? Where was he making bread?
Vince: In there ..
I was halfway hoping to walk into the kitchen and find homemade bread! The I said “Vince . . what kind of bread did the guy make?” And, he said . . I don’t know . . I got up and turned off your computer to stop the video.
Darn! I remembered the video about the bread. There was no homemade bread in my kitchen!
Yesterday I smoked a big brisket and knew we would be having brisket for a couple of days and thought homemade rolls would be nice for a change.
It was so nice to drizzle oil right onto the contertop and not have to use a pastry sheet.
It was even nicer to knead the dough without having the pastry sheet slipping around.
The rolls needed to be baked in a tall pan so I used a black iron Dutch oven.
The rolls were brushed with an egg wash and then some fresh rolled oats were sprinkled on top.
They were worth the wait but I can’t get in the habit of making bread often til we’ve lost more weight. But . . the leftover dough got made into cinnamon rolls.
They got baked but I didn’t eat one last night. This morning I iced them and had one for breakfast. There’s nothing quite like homemade bread!

yes, homemade bread is the best! Too bad it cannot be canned! 🙂

There’s no need to can the bread . . it can easily be made in a Dutch oven if I had to cook it outside. Ingredients for bread are pretty easy to store.

You are absolutely right! There really IS nothing like hot, fresh bread, straight from the oven. I haven’t made any in a while either. Sure sounds yummy!

You guys are SO FUNNY but that is just cruel showing the homemade rolls & cinnamon rolls. Mean, mean, MEAN!! Was the brisket a good deal at Kroger? Might hafta get one and smoke it in prep for Memorial Day!!!

Judy, just a question out of curiosity? Did eating the bread after not eating it for so long make you sick at all? I haven’t eaten bread in several months and the one time I decided to indulge it made me so sick I’ve been afraid to try again.

THey DO look good. HAve you tried Pamela’s Gluten Free flour or Cup-for-Cup? Both a bit pricey but they do well for quick breads and cakes, texture a bit off on the cookies my daughter ( gluten free ) likes, but the taste is good. I order pamela’s on Amazon
Might work for rolls?
