I have a tendency to want everyone to see the value in what I’m doing and I want others to do it too. You probably already noticed that about me. Hey . . no one’s perfect, right? 🙂
Since January 1, we’ve had such good results with our new eating plan. Vince has lost 18 pounds and I’ve lost 17 pounds. I wish you all could just come to our house and eat for a week and see how easy this has been. Maybe it’s because I’m so bull headed that once I make up my mind to do something, I’m going to do it, come hell or high water (except for yarn buying . . I can’t stop doing that!), but we are not struggling at all with this diet. On December 31, at midnight, I went from making sourdough and other yummy breads almost every single day, to zero bread and it hasn’t been hard at all. Just this morning, Vince and I were talking and he said he was most surprised that he hasn’t craved pasta. I went from drinking 4 or more real Dr. Peppers per day to drinking maybe 2 per week. I think having read Grain Brain was the most motivating factor for me. It’s been 2 months since I read it and I still keep thinking about it. The book and the author’s premise is controversial and I’m not going to argue whether he’s right or wrong but I’m telling you . . it’s working for us!
Almost as good as the weight loss is that I’m spending hardly any time in the kitchen and cleanup is a breeze! I rarely mess up more than one pot while cooking dinner.
We both feel so much better! I can hardly wait til one of us has bloodwork and we can see if all those bad numbers have improved.
Seriously, I just want everyone who wants to feel better and lose weight to try it! I don’t want to bore you all with everything we’re doing but if you want to ask questions or find out more, I’ll be happy to respond to questions here or in email. I’m not expert but what we’re doing is working!
For those of you who want to try the diet but think your husband wouldn’t go along with it, I am pretty sure I could be doing this diet without Vince even knowing it. So, if you care about losing weight and feeling better, you can do it even if your spouse doesn’t do it.
Here’s a couple of the lunches we’ve had lately.
Lunch – Shrimp Tacos:
These simply had storebought frozen shrimp because that’s all I can get. I saw paleo approved recipes for making the “shells” using egg whites, coconut flour, etc. but corn tortillas are gluten free and there’s 20 carbs for two tortillas so I said . . heck, we’re eating real corn tortillas.
I put all the “add ons” in separate bowls. I could eat 10 times as much cilantro as Vince would like so we can each put our own favorites in the proportions we like. He had 2 “tacos” and I had one.
That was an amazingly good tasting and healthy lunch.
Lunch – Steak Salad:
This is what I did with some leftover steak. We had a regular salad, I added crumbled goat cheese. The steak was sliced and heated and served over the salad. Easy and healthy!
All of our salads are dressed with balsamic vinegar and olive oil. We used flavored balsamics that are so delicious!
We’re eating good and losing weight and enjoying the new way of eating.

I gave up wheat bread about 6 weeks ago. I still eat about 4 slices of spelt bread a week. I don’t eat crackers anymore, but I use wheat bread crumbs once in a while. I am eating 5-8 servings of vegetables a day now and one or 2 of fruit. I have not seen big weight loses, but I did not eat a lot of sugar before. The 5 lbs. I have lost have all been in my gut! I am thrilled to be wearing my ‘skinny’ size 12 jeans instead of my stretchy size 12 jeans. I plan to continue this diet. I’ve had very little heartburn since I started and tummy trouble only once or twice. This was a good move for me. I was a bread lover before I started this and wouldn’t have believed I could give it up. I was a grump the first 10 days, though. I missed bread tremendously at first.

Music to my ears to read a blog post like this. My friends and family would rather take medicine than change their diets, so I’ve often said the same thing….if you could just spend a week at my house.
In my perfect world you would have a food blog and talk about it every day LOL
Do you can beef in the event of a long power outage? I buy canned organic chicken for emergencies, but I know I would really miss beef if the power was out too long.

Congrats on the weight loss!! If only we could do something like that. Hubby is diabetic and has to have 60 grams of carbs a meal to keep the glucose levels even. We could do this modified with plenty of beans and fruit. So glad you are addressing this before one of you becomes diabetic.

Judy I haven’t read many blogs lately…been down with sciatic and back issues…so I didn’t know you were doing paleo. I gather you’re also gluten free? My brother-in-law lost his sight suddenly last year. It was genetic plus extremely high inflammation numbers. Doctor put him on Pale and said unless he does it his chance of developing Alzheimer’s is heightened. I’ve printed off some stuff on this diet but haven’t started it yet… Blessings, marlene

We’ve been eating gluten free for 2 years and feel so great. We love what we eat. I too was a bread lover and I’ve hardly missed it at all. Keep it up and enjoy!

I’m so happy for you, Judy! I think maybe if I cut out cheese, I’ll lose more weight. I basically eat mostly paleo anyway. It’s my over-production of insulin that really holds me back.

Funny you posted about this as last night I spent some time using your search box to find the name of this book. It took a while but I found it and I requested it from the library.
I’ve been having stomach sensitivity lately and I can’t help but think if I have a gluten intolerance. I’m tired a lot too and eating too many Tums. I”ll be interested in reading this and I’m curious about the prior comment regarding Alzheimer’s.
