Tonight we had pork chops with fried apples and artichokes.
The pork chops were from the pig we bought from the youth fair last year. We’ve used most of the good ones and the ones I had left looked like they might be a bit tough so I simply seasoned them, browned them in the pressure cooker, added a little water and cooked them a few minutes. They were so tender and delicious.
This little pressure cooker (on the left) is so perfect for cooking for the two of us. The larger one on the right is this one. And, the photo was obviously taken when we lived in MO. Just seeing that glass top stove makes me want to run in the kitchen and hug my gas stove. I’ll just hug my husband and one again thank him for moving me to Texas! 🙂

We don’t have gas available here, so I am stuck with the glass top. Probably forever, but hey, the good outweighs the bad where we are so I will take the trade off. I have an electric pressure cooker I got several years ago as a gift, and I cannot imagine not having it – love it. Your dinner looks great, as always. 🙂

Ooo, I LOVE artichokes AND fried apples. Yummy! But I hated my gas cooktop–such a bear to clean. So happy with the glass cooktop I have now! HA Like they say, different strokes and all.

I have the glass cooktop, but it’s an induction range. I couldn’t cook without burning things on the electric range, so I paid a lot for the induction because gas piping was even more expensive. I have to say I miss gas, but the induction range is really easy to get good results on and very easy to clean. I love that I can control the temperature instantly.

Some day, when I either win the lottery or become rich and famous, I’m going to have a gas stove put in here. I have a gas furnace and gas water heater, both of which are just off the kitchen, so running that line can’t be that bad (although I’m sure someone would be happy to charge me an arm and a leg). I love pork chops. My brother and I are considering splitting a pig this year.
