Last night I never showed you what we had for dinner. We had smoked ribs, collard greens and salad.

Tonight we had steak, roasted cauliflower, green bean bundles and grilled cheese with sun dried tomatoes.

Getting scamorza cheese is so much trouble since it has to be shipped from New York . . or wherever else I find it but I can’t buy it locally. Scamorza is very similar to mozzarella but it’s dryer and that makes it easier to grill. This week I bought a pound of Kroger brand mozzarella and it seemed quite dry so we decided to try grilling it and it worked fine. It tasted a little more bland than does the scamorza but for the price and ease of obtaining, we’e happy with it.
Since remembering that I had my Nesco roaster, I’ve hardly used my oven at all. In fact, I may not have used it at all. I’m not making bread and I think everything I’ve baked has, in fact, been done in the Nesco.

Looks awesome. I have a roaster on my “wish list” , any opportunity to save electricity and still produce a great dish is a good opportunity in my book. 🙂 Both plates look well thought out and delicious!

I absolutely LOVE roasted cauliflower. I’ve been on a kick and just can’t get enough of it lately!! I like it _very_ brown…it’s so delicious! Your dinners look fabulous and I’m sure they were delicious, too.

How do you roast the cauliflower in the Nesco.? Temp? Time? Glad your chicks came in OK. My husband was a letter carrier and delivered chicks a couple times. He told me that they always took very special care of them.

Just wanted to give you a head’s up – roasted broccoli is divine hot out of the oven.
And cauliflower “fried rice” (mine usually turns out more like a hash than like rice) is delicious. And super easy if you have a food processor that shreds.

We are eating this way too. I’ve never tried the green bean bundles with bacon but I LOVE roasted cauliflower. Your dinners look great!
