With our new eating plan, I struggle the most with breakfast, then lunch and dinner is a piece of cake. Not literally . . a piece of cake though sometimes I would much rather have a piece of cake! 🙂
A lot of days I can get creative with leftovers from the previous dinners. If we had grilled chicken, I can slice that up and put it on top of a salad or just heat up leftovers but over the weekend, I hadn’t cooked much so we didn’t have any leftovers. Tuna or chicken salad from canned meat have been my standbys on this diet.
Yesterday I fixed tuna salad and served it in half an avocado on a bed of lettuce, with olives, tomatoes, cucumbers and pickled carrots. I added a bowl of mixed fruit – blackberries, blueberries and apple.
The photo shows Vince’s plate and he had quite a bit more than I did and neither of us could eat it all. Vince commented that before the diet, that amount of food would have been an appetizer and now, it’s more than we can eat as lunch.
Last night I made a casserole, of sorts, with chicken, spaghetti squash and a few other ingredients. It wasn’t something I’ll make again but it wasn’t terrible.

This has all been part of my effort goals for the New Year. we have raised a large family on little of nothing and I did extremely well for years getting the best meals out that I could for what we had. Then things were better $wise and more and more kids left home. But they would come back in droves and I was always prepared. Since we now have three at home, I have decided that I need to fine tune my food storage, supply and use to use the food and $ wisely. I shop every 3 to 5 days now, but thinking of breakfast lunch and dinner and what or when I can do with leftovers or how not to have much leftovers. So far I am empressed. Groceries are high, but we are eating fresher and wiser, I think.

I am fairly new to your blog and am curious as to how much weight you have lost? it must be hard to stay motivated at times. As the British would say – “keep calm and carry on”

We made up our first batch of vacuum-sealed salads in a jar on Sunday. I love having all of my lunches done for the week! Thanks for the tip.

You’re doing great, Judy. I eat tons of eggs, but I also eat quite a bit of tuna. Fast and easy protein. I know it sounds crazy, but in the evening I always get a craving for something sweet or salty and crunchy. I found that celery is actually a wonderful thing to eat at that time, and I really do like it. If I’m feeling powerfully hungry, I’ll put a little cottage cheese on it. Not often, but when I’m really feeling deprived.
