While at Kroger yesterday, I saw ham on sale. There’s a lot I can do with ham on this diet so I grabbed a small ham. Tonight, I sliced off some and heated it up in a skillet. Five minutes . . start to finish. I love this diet! 🙂 I steamed some carrots and broccoli.
For the salad, I had leftover mozzarella, tomato, basil salad from last night so I put it on a bed of lettuce, added a few black olives and a bit of guacamole and drizzled it all with balsamic and olive oil
Dinner was quick and easy with hardly any mess at all to clean up. Yep, I love this diet.

Judy your meals all look SO good. I know we should be eating like this. I just hate vegetables, which is a big problem when trying to eat healthfully.

It does seem that low carb is a lot easier to prepare. If only I could talk my husband into trying it. Your dinner looks so yummy and healthy.
I think when I see ham, I see one of several ingredients for chicken and sausage gumbo.
