Dinner tonight more than makes up for dinner last night but I was happy with dinner last night.
Prime rib, yellow squash from the freezer that was grown in the garden last year, and brussels sprouts with cranberries. Yum! Every time I fix prime rib, I tell Vince that I was meant to eat prime rib every night. So far, he is not convinced! 🙁

Yumm! I’m glad I missed dinner last night, but I sure wouldn’t miss it tonight! How did you prepare your brussel sprouts? I’m trying to like them, but it is still a struggle. Perhaps the cranberries, which I love, would help!

Love, love Prime Rib! Med. rare please with horseradish on the side! Squash is a good substitute for a baked potato. Dinner here is going to be an omelet as I went to town and forgot to turn on the crock pot. I though is said Low, no, it was off. Maybe I need new glasses! Enjoy the prime rib! Makes me hungry just looking at it!

Prime Rib is my favorite food on earth! it is expensive but I am worth it and cook it every chance I get. Your dinner looks delicious!

Oh yes, my favorite menu! I roast my brussels sprouts in the oven in olive oil and salt and pepper til just crispy. What a delight! I may have to add this to the weekend menu – Monday I turn 60 and I think the eldest boy may be visiting the weekend. Great reasons to cook it!

There just isn’t anything better than using your own vegetables in a meal, is there?!?! I have been making omelets every morning using frozen peppers, chards and/or kale from the garden last summer! Good for us mind, body and soul to see all that work come to fruition!

The prime rib made me smile. For awhile I was on a prime rib kick and every time we ate out somewhere new I tried their prime rib and often times I was disappointed. Finally I decided to try making it myself using Alton Brown, Guy Fieri, and Paula Deen recipes. Last week I tried the Paula Deen recipe and I think that will be my go to one next time. Loved the rub and you essentially cook it for an hour and leave it in the oven for 3 hours, cook again for 30 minutes and it’s done! I too could be a prime rib every night kind of gal!
