Tonight’s dinner was chicken piccata over shirataki fettucine noodles, grilled zucchini and salad.
The chicken chunks were breaded in almond flour and fried in coconut oil. The salad dressing is the sun dried tomato vinaigrette dressing. Diet never tasted so good!

When you use coconut oil to fry things does it give the food a coconut taste? Just curious.

Kathy – the house will usually smell like coconut, but it doesn’t really taste like it. If you’re really worried about that, they sell oil that’s been treated to not smell like coconut…but I’m more of a fan of natural products. I usually just use butter.

Judy, You really should do a cookbook. You make and use foods I’ve never heard of. A diet receipe book would be good. Do that in your spare time, would ya???

I’m curious about the coconut taste too since I’m not fond of it.
Grilled zucchini is one of my favorites! Simple prep here – just s&p, garlic and thyme. Grilling really does bring out the flavor!

You’re waaaaay more ambitious about this than I was. LOL I didn’t explore any new recipes, I just ate simplified versions of “normal” food, like a burger without the bun 🙂

Some refined coconut oils don’t have the coconut taste. I get one from Wilderness Family Naturals that hardly has any taste or smell to it. There are some dishes I prefer to use this. Some of the health benefits are eliminated when it is processed, so I do keep an unrefined one to use most of the time. But either is better than hydrogenated vegetable oils. Also, if you salt the regular coconut oil while it’s melting in the pan, it takes away some of the coconut taste. Our daughter loves the coconut taste for everything… I’m not quite there on the conversion yet!

Do you actually like those noodles? I bought some and I couldn’t make it through the first mouthful. I was so very disappointed.
