Three days now and we’re doing great. Dinner tonight was a spinach salad with homemade dressing which included sun dried tomatoes, basil, olive oil and balsamic vinegar. The salad had spinach, bacon, boiled eggs, and mushrooms and then we added grilled chicken on top!

You must be using your indoor herb garden grower thing again, to have basil in January! That will make your eating plan more delicious.

Yum! Will you come be my cook, too? My husband is very picky about what he eats, so I often fix two different meals for us. You need to post your meals daily, and maybe I can follow you for my meals!

Judy, that looks delicious! Can you post the recipe for how you make that dressing? Like you, I am wanting to eat healthier this year too. Thanks!

Looks wonderful and I am grateful that you shared your vinaigrette recipe too. I printed it out and will be trying it out.
I’ve also am eating better and as a result my diabetic sugars are falling into the normal range while still taking all the Rxs but did call the drs since it was falling quite abit! Huge success my insulin dosage is lessened!! YIPPEE!!!!
Recently I saw a sentence and it implied “if you eat until your are sick, then you must fast until you are better. That resonated within me, so I know I’ll be embracing this paleo, low carb lifestyle for awhile. It’s not bad having ham roll-ups for lunch, tuna salad in avocado bowls, salads, etc. and feeling lighter, not as stuffed and having more energy. I’m in week 2. I started on the 26th of December and did well at a New Year’s party get together. I brought a veggie platter, sausage dip and ranch dip too.

That sounds lovely!

My husband and I both need to lose weight. “Discipline” isn’t a word that’s in our respective vocabularies though. LOL!
