Monday Vince asked for something “pumpkin”. I asked what he was thinking. He said . . just something pumpkin. He really loves pumpkin and we’re on Weight Watchers . . more or less. We kinda take off on weekends. I don’t think he wanted to wait for the weekend to get something pumpkin!
My first thought was pumpkin fudge. I love pumpkin fudge. Vince does not love pumpkin fudge. Scratch that idea. I read through the Weight Watchers recipes and some of them look good but then I remember that my friend, Judy, makes a Pumpkin Roll every year at Thanksgiving . . maybe two or three times because it seems at least a dozen times around Thanksgiving, I’m drooling over her Pumpkin Roll. So, I made a pumpkin roll!
She’s right .. it’s easy . . and it’s pretty . . and it’s delicious! It could be made ahead of time so it makes a perfect dessert for taking to dinners or if you need a dessert to send somewhere. It reminds me of a dessert you would get in a good restaurant!
Vince liked it too. We had this interesting conversation:
Vince: This is so good. How did you make it?
Me: I can’t tell you.
Vince: How did you get it all rolled up?
Me: I can’t tell you.
Vince: Why can’t you tell me?
Me: Because you need to keep me around so I can make you a pumpkin roll.
Vince: Do you think I can’t find someone else to make me a pumpkin roll?
Really? Wrong answer! Pumpkin roll got dumped in the trash. Not really! 🙂

I made a wonderful stuffed pumpkin on Sunday. I can send you a link if you want me to….I found it through Pinterest – there are a LOT of stuffed pumpkin recipes there! The one I made was on the Martha Stewart site and was called “pumpkin stuffed with everything good.” I left out the bacon and used a blend of mild cheddar and monterrey jack along with some shredded parmesan. It might need to be a weekend indulgence if you decide to make it! It was wonderful and even my picky daughter loved it.

I was eyeing up the WW pumpkin oat bread (bars) recipe the other day but haven’t tried making it yet. Your pumpkin roll reminds me of my sister’s — she makes a great one too.

I LOVE pumpkin roll and have made one and could NOT say it was easy. Actually it was a pain in the butt!! But they are SO GOOD! That Vince is such a pill.

My daughter and I make one to dozen of these every year and freeze them. They defrost tasting like they were just made! When I worked in the hospital we had the recipe hanging in the locker room! Everyone made it.

Not sure we can get canned pumpkin over here. Is it just mashed up cooked pumpkin? That roll looks wonderful.

My favorite WW dessert recipe is any flavor cake mix, a can of pumpkin, and 1/2 cup water. Bake at 350 for 30 minutes. Divide the 9×13 pan into 12 slices for 3 points each.I make it with spice cake and devil’s food cake. Even my husband doesn’t realize he is eating something good for him!
