About once a month, I crave smoked chicken. I don’t put a lot of wood in the smoker when I smoke a chicken. I like just a hint of smoke and my favorite woods for chicken are apple or cherry. Most of the day, it had soaked in a honey rosemary brine and it was delicious!
We had it with smothered okra, and borracho beans.
The leftover chicken was picked off the bones and frozen, to be used in a few weeks in gumbo. I only like gumbo during cooler weather and can hardly wait to have smoked chicken gumbo with home grown okra! Yum!

Mmmm. I’m ready for cooler weather food too. I had turkey soup with roasted butternut squash and greenbeans in it tonight. It was so good!

Sounds yummy (all except for the rosemary..can’t STAND rosemary!!). We used to have a smoked turkey every year at Thanksgiving and it was SO GOOD!! My folks received it every year by mistake from some company sending to their client. They told the company several times that they had the wrong guy but they kept coming so we ate em! LOL

Funny, last night we had roast chicken too!! Only it was Costco roasted! LOL

I just pulled some leftover roast chicken out of the freezer and made chicken encliladas! Yum!
